Ah good question,
Unfortunately with all cookies – they will go soft after it’s baked. It’s inevitable because there is certain amount of moisture within the cookie and that will propagate throughout and affect the outerlayer as well. One way around this is to re-heat it in the oven – so basically re-baking it for just a few minutes. Just long enough to evaporate the moisture from the surface. I reckon this would be 2~3mins at its original baking temp. but do test it out (it may take longer).
So I guess what you can do is if you serving this as desserts for a dinner party then you can turn your oven on and put the cookies in when you are done with the final course of the meal! The cookies should be ready/warm in a few mins.
