Hi Rose,
To be honest, regarding commercial bakeries like Ben’s Cookies…they simply bake it and sell it on display. So the cookies will not be warm or crisp on the outside unless you time it well so that you are lucky enough to buy the cookie that has been freshly baked. The term “freshly baked” is a bit misleading as well, because all cookies will be freshly baked! But does that mean they are not fresh if they are still sold in the afternoon? haha. Although I might not be completely correct here, from what I’ve heard about Levain bakery in NYC the cookies there are warm when they are sold – but that’s because they are so popular such that they are able to sell immediately what’s been baked! (rare case)
So the process of rebaking/reheating the cookie can probably be done only in a homebaking context where you actually have the time and resources to do it. In a commercial shop, you simply need to sell sell sell.
